Vegan Chilli Recipe:

* 2 teaspoons extra-virgin olive oil
* 1 onion, chopped
* 1 red bell pepper, chopped
* 3/4 can (14-19 ounces) black beans, rinsed and drained
* 3/4 can (14 1/2 ounces) diced tomatoes, with juice
* 3/4 can (14 ounces) vegetable broth
* 1 can (4 ounces) green chili peppers, chopped
* 2 teaspoons chili powder
* 2 cloves garlic, minced
* 1 teaspoon ground cumin
* 1 teaspoon dried oregano
heat the oil in a 6-quart Dutch oven over medium-high heat. Add the onion and bell pepper and cook, stirring frequently, for 3 minutes. Add the beans, tomatoes, broth, chili peppers, chili powder, garlic, cumin, and oregano and simmer for 20 minutes. Serve with the avocado salsa and lime wedges. Sprinkle with some chopped cilantro. Avacado salsa recipe follows.

Avacado salsa:
1 medium California avocado, peeled, pitted, and finely chopped
1 small tomato, finely chopped
1/4 red onion, finely chopped
1 clove garlic, minced
1 tablespoon chopped fresh cilantro
Juice of 1 large lime
1/4 teaspoon ground cumin
1/4 teaspoon ground black pepper

In a large bowl, combine the avocado, tomato, onion, garlic, cilantro, lime juice, cumin, and pepper. Lightly toss. Let stand for 30 minutes.
This is my favorite chilli recipe its from the south beach diet cookbook and it tastes so good you wont miss all the meat... I promise. I also like to add some chopped white button mushrooms when sauteing the onions and peppers called for in the chilli recipe above, but thats optional.

15 g dietary fiber
665 mg sodium
0 mg cholesterol

you can eat them non dehydrated they just dont have the chewy texture.I cant wait to see the pictures you post!!!!

Woo hoo to dehydrator! I love my Magic Bullet too. BTW, I made a whole bunch of vegan desserts this past weekend, and this time, I took pictures!! I'll post those pics soon. I hope. :) I'd love to see your rawnies recipe, though I'll have to figure out a non-dehydrator way to make them.

A list of my new favorite things.... Excalibur dehydrator, food processor and magic bullet. They make my kitchen adventures fun and simpler. On another unrelated note I made vegan brownies and yes they were rich and delicious but crumbly and too moist. I actually enjoyed my dehydrated rawnies better and although both only used a couple ingredient the rawnies did hold up better. I wish i could share a recipe for the rawnies but i bake raw treats on the spot. Ill have to figure out a recipe for that and post it. I loved them sooo much I must share.

i finally got my excalibur dehydrator and with it i made brownie bites, macaroons and cashew date cookies. They came out wonderfully.

I was trying to find something to eat for lunch and played around with the veggies in my fridge and this is what i came up with. I used a potato peeler to make thin wide long strips of cucumber i placed them them down on a plate in a basket weave pattern. put some mashed avocado on it then as if making a taco i added shredded carrot,shredded red cabbage, alfalfa sprouts, thinly sliced tomato and a dash of sea salt romaine lettuce and rolled it up. It was crunchy and delicious.
