i finally got my excalibur dehydrator and with it i made brownie bites, macaroons and cashew date cookies. They came out wonderfully.

I was trying to find something to eat for lunch and played around with the veggies in my fridge and this is what i came up with. I used a potato peeler to make thin wide long strips of cucumber i placed them them down on a plate in a basket weave pattern. put some mashed avocado on it then as if making a taco i added shredded carrot, shredded red cabbage, alfalfa sprouts, thinly sliced tomato and a dash of sea salt romaine lettuce and rolled it up. It was crunchy and delicious.

Great group. I am new to Oak Park as well to the vegan lifestyle. Due to health issues my herbalist wants me to cut out all dairy, meat, wheat, and soy. I am switching slowly and the more alternatives I can find the easier the switch. So far I love almond, hemp, and rice milk. Lara bars are a lifesaver for junk cravings. I eat a lot of salads now. I'm looking forward to getting ideas for food now that I am eating to live!!

Angela - I'd love to know how to make my own almond mylk. And the tart you showed above with the leftover paste too. :D Please post the recipe when you get a chance. Thanks!

Yeah, definitely a winner in my book. I've been raving about it. Rich food though. I didn't feel the urge to eat until about 2:00 pm the following day. But I *had* to have the leftovers when I did eat again. ;)

I just drove past there yesterday and said to my wife that we should try that place. I'm not vegan, just vegetarian, but I'm always down for a creative vegan meal. Awesome.

Swati, that is awesome. I had no idea that Cafe Laguardia could be so vegan friendly. Now I must go and see about that coconut ice cream.

My husband and I went to Cafe Laguardia West on Fri eve, just stumbled across the place (we're still new to OP) and thought we'd try it out. My husband ordered a sampler sort of platter and I explained to the waitress that I didn't eat meat, fish or dairy, and she said she'd have the chef put together a nice platter for me. Man, it *was* nice! Yuca, plantains (two preparations!), guacamole, vegetarian rice, veggies. I was pleased! And then, the chef sent over another dish for me! Fried yuca balls with a red plantain center, smothered in this tasty, creamy, coconut sauce. It was so, so delicious. I thought it couldn't get any better, but then they brought out vegan coconut ice cream. Mmm... so, so good. What a wonderful surprise! So often I go to regular restaurants, and just find a salad or fries or something to eat - filling, sure but not necessarily satiating. My experience at Laguardia was incredible! Will surely be going back! Just thought I'd spread the word to fellow vegans in OP!!
